Here’s my easy  Garbanzo Bean Soup recipe for a yum, nutritious and healthy meal

Time Taken: 15 minutes

Ingredients:

2 Cups Garbanzo Beans (chickpeas), soaked over night I prefer not to use tinned/canned food

2 cloves of garlic diced

1 slice of ginger diced

1 Tomato

2-3 Red/Green Chilies (as per your taste)

Pepper and Salt (as per your taste)

Preparation:

  1. Saute chopped onions until transparent
  2. Add the diced garlic and ginger
  3. Throw in the chopped tomatoes and let it simmer on low heat
  4. Once the tomatoes are slightly cooked add in the boiled Garbanzo beans with the water (that was used to boil the garbanzo so no nutrients are lost)
  5. Add Salt and pepper to taste
  6. Add the sliced chilies as per your liking
  7. Let it simmer in a closed pot for 10 minutes and your soup is ready
  8. Add parsley or coriander for the final garnish just before serving

I grilled some fresh corn on the cob as a side for the soup
